Grilled Pork Tenderloin and Sweet Potato Hash

Ingredients

Chili pork tenderloin

  • 1 lb pork tenderloin
  • 1/4 cup honey
  • 2 tbsp chili powder
  • Juice of 1 lime
  • 1 tsp salt

Sweet potato hash

  • 1 large sweet potato, peeled, 1/2-inch chunks
  • 2 ears sweet corn, grilled then kernels cut off
  • 1 poblano chile
  • 1 red onion, ends removed, halved
  • 2 tbsp olive oil
  • 1/2 cup shredded Monterrey Jack
  • 1/4 cup fresh chives, chopped
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Grill and marinade (pork)

  2. Preheat grill to medium-high and brush grate with oil. In a bowl, whisk honey, chili powder, salt, and lime juice; add pork tenderloin and marinate 10–15 minutes. While marinating, chop all hash vegetables.

  3. Sweet potato hash

  4. Heat a griddle to medium-high and coat with vegetable oil cooking spray. Toss sweet potato, corn, poblano, and red onion with olive oil, then cook on the griddle 15–20 minutes until soft with grill marks. Return to a bowl and toss with cheese, chives, lime juice, salt, and pepper.

  5. Pork

  6. Grill tenderloin about 10 minutes per side until internal temperature reaches 150°F. Rest 5 minutes, then slice into 1 1/2-inch-thick pieces.

  7. Serve

  8. Scoop hash onto plates and serve with sliced tenderloin.
