Jewish Apple Cake

Ingredients

Cake

  • 3 cups flour
  • 2½ cups sugar
  • 1 tsp salt
  • 2½ tsp vanilla
  • 3 tsp baking powder
  • 1 cup oil
  • 4 eggs
  • 3 tbsp orange juice

Filling

  • 4 large apples, coarsely chopped
  • ¼ cup sugar
  • 1 tbsp flour
  • 2 tsp cinnamon

Instructions

  1. Batter

  2. Cream sugar and oil. Add eggs, one at a time. Add orange juice and vanilla. Add remaining cake ingredients; do not add apples to the batter.

  3. Apple filling

  4. Mix filling ingredients and toss with apples until well coated.

  5. Layer and bake

  6. Preheat oven to 350°F.

  7. In a greased and floured tube pan, layer batter and apple filling: batter, apples, batter, apples, and so on. End with apples on top.

  8. Bake at 350°F for about 1¼ hours. Check the cake around the 1-hour mark.

  9. Cool completely in the pan. Remove pan sides first, then the bottom. Invert onto a cake plate if desired.
