The Giant Meatball Meatloaf

Ingredients

For the meatloaf

  • 1 sleeve (about 36 / about 100 g) saltine crackers, crushed fine
  • 2 large eggs
  • 1 cup (240 ml) buttermilk (whole milk works too)
  • 4 to 6 garlic cloves, grated or minced (about 15–25 g)
  • 1/2 cup (15 g) flat-leaf parsley, finely chopped
  • 1/2 cup (50 g) grated Pecorino Romano (or Parmesan / Grana Padano)
  • 1/2 cup (60 g) shredded Fontina cheese (optional)
  • 1 teaspoon (5 g) kosher salt, plus more to taste
  • Freshly ground black pepper
  • 1 pound (450 g) ground beef (80/20)
  • 1 pound (450 g) ground pork

For the sauce

  • 1 can (28 ounces / 800 g) high-quality crushed tomatoes (Bianco DiNapoli or similar)
  • 2 tablespoons (30 ml) extra-virgin olive oil, plus more for drizzling
  • 1 sprig basil
  • Salt, to taste

To finish

  • More Pecorino Romano and chopped parsley

Instructions

  1. Make the panade

  2. Adjust an oven rack to lower-middle position and preheat the oven to 400°F / 200°C. Combine the saltine crackers, eggs, buttermilk, garlic, parsley, cheeses, salt, and several grinds of pepper in a large bowl. Squeeze with your fingers until the paste resembles wet oatmeal.

  3. Add the meat

  4. Add ground beef and ground pork. Mix gently by hand until just uniform. Stop before it feels springy or sticky.

  5. Check seasoning

  6. Microwave or pan-fry a teaspoon of the mixture for 10–15 seconds until cooked through; taste and adjust salt and pepper levels in the raw mixture, repeating as needed.

  7. Shape the loaf

  8. Line a rimmed baking sheet with foil or parchment and lightly oil it. Shape the mixture into a large free-form loaf and insert a thermometer probe into the center (if using).

  9. Bake

  10. Transfer to the oven and bake until internal temperature reads 150°F / 66°C, about 45 minutes. (If using a leave-in thermometer, set target to 150°F and let carryover finish.)

  11. Rest

  12. Remove from oven and rest on a cutting board 10–15 minutes. The center will rise to about 160°F / 71°C.

  13. Make the sauce

  14. While resting, heat crushed tomatoes with olive oil, basil, and salt in a medium saucepan until simmering. Maintain a bare simmer until the meatloaf is rested and ready to serve. Discard basil and adjust seasoning with more salt as desired.

  15. Serve

  16. Transfer the meatloaf to a serving platter and spoon sauce all around it. Set the loaf in the center, slice thickly, and finish with Pecorino, parsley, and olive oil.

Notes

  • Pull at 150°F / 66°C; carryover while resting to about 160°F / 71°C
  • Free-loaf on a sheet pan or shallow casserole for better browning (skip the loaf pan)
